Vegetable Broth


6 cups of water

2 celery stalks chopped

2 carrots chopped

1 onion chopped

1 clove of garlic

1 bay leaf

1 red pepper chopped

MSG-free boullion to taste

salt & pepper to taste

Bring to a boil and let simmer until the vegetables are tender.  You can either serve with the vegetables, or stain and just have the broth.  Pearl Barley can be added as desired.  It doubles in size when cooked, so ¼ cup uncooked added to 1 cup of stock would be quite hardy.  You can also add cooked chicken or ham.  The choices are endless.
