Tamari Almonds
Most seasoned nuts are loaded with MSG. So why not make your own and be safe.
3 tbsp tamari soy sauce
1 1/2 tbsp extra virgin olive oil
1/4 tsp cayenne pepper (this adds some “zing”)
3/4 tsp salt
4 cups (1 1/4 lbs) whole, unblanched almonds
Combine the tamari, oil, cayenne and salt in a large bowl. Stir in the almonds and coat well. Let sit for at least 1 hour, stirring often.
Preheat the oven to 300F. Using a slotted spoon, remove the almonds from the bowl and lay on a baking sheet. Discard remaining marinade. Bake for 20 minutes – stirring the almonds every 5 minutes. When they are done, the almonds should look dry and crusty, but not burnt.
If you want the almonds to have a slighly sweet taste, add 1 tbsp of brown sugar to the above marinade. The added sugar may require less cooking time, so keep an eye on the almonds while cooking.
