Southern “Fried” Buttermilk Chicken
If you are looking for a healthy alternative to Fried Chicken, then here is the recipe for you.
2 cups buttermilk
3/4 cup all-purpose flour (or multigrain flour if possible)
3/4 cup plaid dried bread crumbs (dry some multigrain bread and make that into bread crumbs)
2 tbsp minced fresh thyme (or 2 tsp dry)
1 tsp garlic powder
1 tsp paprika (or 1/4 tsp cayenne if you like it spicy)
1 tsp salt
1 tsp freshly ground black pepper
1 pound skinless chicken parts
Preheat oven to 400F. Rub some olive oil on a baking sheet.
Put the flour in a bowl. Pour the buttermilk into another bowl. Mix the bread crumbs and spices in a third bowl. Dip the chicken into the flour, then dip in the buttermilk, then finally dip in the bread crumbs mixture. Place the chicken on the baking sheet.
Bake approximately 40 minutes until the chicken is cooked through.
