Roast Chicken


1 Roasting chicken

1 lemon cut into wedges

4 cloves garlic

2 tbsp olive oil

garlic powder

paprika

Thoroughly wash and pat dry the chicken.  Place chicken in glass baking pan.  Stuff lemon wedges and garlic into cavity.  Rub the olive oil all over the outside of the chicken (this keeps the skin moist).  Sprinkle entire chicken liberally with garlic powder and paprika.  Cook at 375F for about 1 hour -  depends on size of chicken – or until juices run clear (pull on the leg and if there is still blood, it’s not done, but if clear, it’s done).  Baste the chicken occasionally while it is cooking.  This helps prevent it from getting dried out.

Use any left over chicken to make Curried Chicken Salad
