Rice Romanoff


This a fantastic side dish or main course with some steamed veggies on the side.  I love the cheesy taste and texture

3 cups water

1/2 tsp salt

1 1/2 cups long-grain brown rice or brown basmati rice

2 cups cups cottage cheese

2-3 cloves of garlic

1/2 tsp salt

1/2 tsp freshly ground pepper

3 green onions, trimmed and finely chopped

1 cup grated cheddar cheese

Preheat the oven to 375F.  Bring the water to a boil and add the salt.  Add the rice, stir once and reduce the heat to low and let simmer.  Cook for about 20  minutes or until the water is absorded and the rice is tender.

Using a blender, mix the cottage cheese, garlic, green onion, salt and pepper, combine until smooth.  Add the cooked rice to the cottage cheese mixture and stir in 1/4 cup of cheddar cheese.  Pour the mixture into a 9X9 baking dish.  Scatter remaining cheddar cheese onto.  Bake for 20 minutes or until thoroughly heated and the cheese is bubbling.
