Mona’s Mother’s Mother’s Best Friend’s Favourite Cookies
I have been making these cookies since I was a teenager. They are yummy and chewy.
If you are going to eat cookies, at least make them yourself so that you are not paying for a bunch of artificial flavours, colours, preservatives and hydrogenated fats.
1 cup butter
1/2 white sugar
3/4 cup brown sugar
1 egg
1 cup all purpose flour
1 cup oatmeal
1 cup chocolate chips
Preheat the oven to 325F
In a mixing bowl, use beaters to cream together the butter and sugar. Beat at a high speed for at least 2 minutes to combine well. Add the egg and beat for another 1-2 minutes. Gradually add the flour, then the oatmeal. Stir in the chocolate chips. Place spoonfuls on a baking sheet. Make sure they are not too close together because these cookies spread out to flat. Bake for 8-10 minutes. Watch them closely because they will go from done to burnt quite quickly due to the butter. They should be golden brown around the edges.
One thing I have learned is to bake just one tray at a time. I put the rest of the cookie dough in spoonful sizes on a cookie tray and freeze. I can bake just the amount I need and bake up more as we go through them. That way, they don’t get stale (although with these cookies, there’s not much chance of that happening). If you make a double batch, you can have even more saved in the freezer. This helps to reduce the temptation to buy those awful store bought cookies.
