Lasagna


This is far and away my kid’s favorite dinner.  They actually cheer when I tell them this is for dinner!

1 package whole wheat lasagna (boiled as per instructions on box)

1 750g (about 3 cups) container of 1% cottage cheese

2 eggs

½ cup grated  parmesan cheese

2 cups part-skim mozzarella cheese shredded

3 cups of spaghetti sauce (see above)

In a 9X13 cake pan, lay down 1 layer of cooked lasagna noodles.  Spread 1 ½ cups of spaghetti sauce over the noodles.  Add another layer of noodles.  In a separate bowl combine cottage cheese, eggs and parmesan cheese.  Spread cheese mixture over layer of noodles.  Add another layer of noodles.  Spread 1 ½ cups of spaghetti sauce over the noodles. Add another layer of noodles.  Sprinkle mozzarella cheese over the top.  Bake at 350F for about 45 minutes or until the sauce is bubbling up to the top.  Remove from the oven and let it set for about 10-15 minutes then serve.
