Kale Chips


I have never liked Kale, in fact, it is not something I would ever have purchased.  But a client told me about “Kale chips” being an amazing replacement for potato chips.  I was extremely skeptical but willing to give it a try.  Well, I still can’t believe how much I LOVE these chips.  You just have to try them.  Here is a simple recipe for how to make Kale Chips

1 Bunch Kale

1-2 tsp extra virgin olive oil

sea salt

pepper

Preheat oven to 375F.  Tear the kale leaves off the tough center stock, discard the stock, and put the torn pieces into a mixing bowl.  Add the olive oil, salt and pepper.  Be careful not to add too much salt.  The kale will shrink in the heat so the salt will intensify.  Mix the leaves thoroughly with the olive oil and place on a cookie tray.  Place in the oven and set the timer for 6 minutes.  Check on the kale at the end of 6 minutes and cook longer if it has not reached the desired crispiness.  The time will vary depending on how crispy you like them.  Be careful not to burn.   Enjoy.
