Homemade Tomato Soup


Why buy canned tomato soup which is expensive, loaded with salt and probably MSG.  Here is a simple recipes that takes minutes to make.  You can change the taste by changing the herbs.

2 tbsp extra virgin olive oil

2 cloves of garlic, minced

1 – 28 ounce can of crushed tomatoes or 2 pounds of fresh tomatoes chopped

salt & pepper to taste

Herb suggestions:

1 tsp dried basil or;

1 tsp dried tarragon or;

1/2 tsp fennel seeds or;

1 tsp dried oregano

Heat the oil in a medium pot.  Add the minced garlic and herb of your choice and cook over medium heat for about 3 minutes.  Add the tomatoes.  Use a potato masher, hand mixer or blender to smooth the mixture.  Season with salt and pepper.

Add some milk or cream if desired for a creamier texture.
