Healthy Sauteed Asparagus
Asparagus has a healthy type of carbohydrate called INULIN that the body can’t digest BUT it promotes the friendly bacteria in the large intestine. This good source of fiber also helps protect against colon cancer. This recipe makes it easy to incorporate asparagus in your diet.
1 lb Asparagus
3 tbsp non-msg chicken or vegetable broth
Heat 3 tbsp of broth over medium heat. Snap the woody ends of the asparagus and then cut into 2 inch pieces. When the broth is steaming add the asparagus and cover. Cook for about 3-5 minutes depending on the thickness of the asparagus. You don’t want to overcook it. Transfer to a bowl and toss with the Mediterranean dressing.
