Guacamole
This is my usual contribution to parties and I always get asked for the recipe. Avocados are full of the good fats you hear about. Anyone with Arthritis should eat avocado everyday. Serve with Multigrain Tortilla chips.
3-4 ripe Avocados mashed
½ Red Onion finely minced
1 head cilantro finely chopped
Juice of 1 Lime
¼ – ½ tsp of Cumin (to taste)
¼ – ½ tsp of Chili Powder (to taste)
Salt & Pepper to taste
1 Tomato finely chopped (optional)
Combine all the ingredients and then refrigerate for at least 30 minutes for the flavours to really come together. Note: Using lime instead of lemon stops the avocado from oxidizing and turning brown for days, but if you are stuck, you can use lemon.
