Fresh and Simple Pasta Dish
When you are trying to add more vegetables to your diet, a good way is to “disguise” them with other foods you like. If you are a pasta fan, then you will like this dish. It tastes very “fresh”. Tomatoes have lycopene which is a powerful antioxidant that has been shown to reduce the risk of certain cancers. This simple recipe incorporates tomatoes in a very delicious way.
1 lb fresh or frozen cheese tortellini or ravioli
2 tsp butter
4-6 green onions (scallions) thinly sliced
2 medium tomatoes, cored, seeded and finely diced
2/3 cup sour cream
2 tbsp grated parmesan cheese
salt & pepper to taste
Bring a large pot of water to a boil and cook until tender but not mushy. In a medium skillet, melt the butter. Add the green onions and tomatoes, saute 2 minutes or until just hot – don’t overcook. In a small bowl mix together the sour cream, parmesan cheese, salt and pepper. Drain the tortellini and return to the pot. Pour in the sour cream mixture and toss together. Serve the tortellini on plates and spoon some of the tomato mixture over each serving. Enjoy.
