Caramelized Onions


Onions have lots of sulphur in them, which is missing in many peoples diets.  By caramelizing them, you break down the starch and make them easier to digest.  Add these to your steamed vegetables, on crackers with goat cheese, to vegetable broth, etc.

1 large sweet or red onion sliced

1 tbsp olive oil

On medium-high heat, saute the onions until they are just starting to turn brown.  Turn down the heat to medium-low and continue to let them cook for 20-30 until they are very soft and golden.  Stir occasionally
