Boniet (pronounced bun-yet)
This is an amazing appetizer that always gets rave reviews. My Dad now makes it for every party he goes to. The best part is that it is super healthy, but you’d never know it by the taste – so yummy!!
2 bunches fresh parsley finely chopped
1 (2 oz) can of anchovy fillets, chopped or use anchovy paste
3 cloves garlic, minced
1 1/2 tbsp tomato paste
4 tbsp distilled white vinegar
1/2 cup extra virgin olive oil
In a medium bowl toss together all the ingredients. Let sit for an hour for the flavours to blend. Serve at room temperature with a sliced baguette.
