Best Vegetable Marinade EVER
This marinade makes everything taste good – vegetables, beef, poultry, seafood. I especially recommend it if you are having trouble getting those vegetables down. You can cook up a large amount and reheat it or eat it cold later.
1/2 cup extra virgin olive oil
3 tbsp fresh lemon juice
4 1/2 tbsp tamari soy sauce
1 green onion (scallion) very thinly sliced
3 cloves garlic crushed
1 1/2 teaspoons ground ginger.
This makes about 1 1/4 cups. You can put your food into “ziploc” type bags and add the marinade and then shake the bag to spread the marinade around, then store in the fridge so that the flavors can be absorbed.
My favorite veggies with this marinade are mushrooms, red peppers, zucchini and broccoli. I also love this with shrimp or chicken. Enjoy.
