Saute your Vegetables – But Watch The Time

Different vegetables have different cooking times. I have grouped some together here for you to make meal time a little easier. One of the healthiest ways to saute vegetables is in a fry pan on medium heat with 3 or 4 Tbsps of low-sodium, no-MSG vegetable or chicken broth. Cover and simmer for the allotted time suggested below. Also below see the Mediterranean Dressing that is great to serve with all of these vegetables.
- fresh peas
- summer squash (zuchhini)
- chopped tomato
5 Minutes
- red or white cabbage
- cauliflower
- asparagus
- broccoli
- carrots
- brussel sprouts
- green beans
- collard greens
7 Minutes
- onion
- mushrooms
- bell pepper
- eggplant
- leeks
- cubed sweet potato
Mediterranean Dressing:
- 1 cup Extra Virgin Olive oil
- 1/3 cup fresh lemon juice
- 4-5 cloves of garlic crushed
- salt & pepper taste.
Once you have sauteed your veggies, toss with this delicious dressing for a quick and easy dinner. You can even throw in some cooked chicken, seafood or beef.
